Air Fryer Spicy Bean Burgers

These homemade Air Fryer Spicy Bean Burgers make a tasty, nutritious alternative to traditional burgers.

Made with mixed beans and sweet potato, then spiced to your liking, they're perfect for vegetarian and vegan diets.

Cooking them in the air fryer makes these Spicy Bean Burgers crispy on the outside and deliciously soft in the middle. Serve on a bun with salad for a healthy, satisfying meal.

Air Fryer Spicy Bean Burgers Recipe

Ingredients

Makes 2 burgers

  • 200g whole sweet potato
  • 400g tin mixed beans
  • 1 small red onion
  • 1 large clove garlic
  • 1 small red chilli
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cumin
  • oil
  • salt & pepper

Directions

  1. Air fry the sweet potato at 200C for 30 minutes.
  2. In the meantime, drain and rinse the mixed beans. Pat dry, then set aside for later.
  3. Very finely dice the red onion and chilli. Peel and crush the garlic clove.
  4. Heat a drizzle of oil in a small pan.
  5. Add the onion and garlic, plus 1tbsp of chopped chilli (adjust according to taste). Saute for 5 minutes, until the onion has softened.
  6. Using a fork, mash the beans. You want to crush them down while still maintaining some texture.
  7. Once the sweet potato has cooked, peel off the skin and add the flesh to a large bowl.
  8. Mash the sweet potato flesh, then tip in the crushed beans and cooked onion.
  9. Sprinkle over the paprika and ground cumin. Generously season with salt and pepper.
  10. Give everything a really good mix up to combine all the ingredients.
  11. Divide the mixture in half. Shape each half in to a patty shape.
  12. Spray the air fryer plate with oil, before placing the patties on top.
  13. Air fry the burgers at 200C for 10 minutes.
  14. Serve on a burger bun with lettuce, sliced tomato and your choice of sauce.

Air Fryer Spicy Bean Burgers Recipe Notes:

1. Make sure you weigh your sweet potato to check you have the required quantity. Too much will make the mixture very wet and hard to form in to the required shape. If there's not enough sweet potato, the mixture won't stick together properly.

2. The type and amount of chilli you use in these Air Fryer Spicy Bean Burgers will obviously alter the spice level.

I use a Serenade red chilli as I like a hint of spice without it being overbearing. If you wish to add a bit more heat, either use extra chopped chilli, or one with more pungency on the Scoville scale.
