Tomato Bruschetta Recipe

This recipe has recently become a firm favourite in our house, with the whole family enjoying the fresh ripe tomatoes combined with spring onions, extra virgin olive oil, and a hint of garlic. A healthy, delicious light lunch or snack. Perfect for summertime.

Ingredients for 4 Bruschettas

4 thick slices of artisan bread (e.g. sourdough, ciabatta, country loaf)

3 medium ripe tomatoes - diced

3 medium spring onions - finely chopped

1-2 tbsp good quality extra virgin olive oil

1 garlic clove - cut in half

salt & pepper

Directions

  1. Turn on the grill to a high heat
  2. In a bowl, combine the tomato and spring onion. Season well with salt and pepper
  3. Brush one side of each slice of bread with olive oil.
  4. Rub the garlic (cut side down) over the oiled slice of bread. Make sure you rub it over the sharper cut edges of the bread to rough up the garlic clove a little, which will help release some of the flavour.
  5. Place the slices of bread, oil side up, under the grill for 1-2 minutes - until the edges are just beginning to brown.
  6. Turn the bread over. Repeat steps 3-5.
  7. Remove the bread. Cover each slice with 1/4 of the tomato topping.
  8. Serve.

Notes

For extra flavour, try adding some chopped fresh basil to the tomato mixture, or scatter a few small pieces of mozzarella cheese over the top.
