Tropical Overnight Oats

Start your day the tropical way with this delicious overnight oats recipe. Simply mix coconut milk, yogurt, dried fruit and a touch of cinnamon to your oats for a healthy, easy breakfast idea packed full of tasty goodness.

Tropical Overnight Oats Recipe

Ingredients

  • 50g rolled porridge oats
  • 100ml coconut milk
  • 2 tbsp yogurt
  • 5g coconut flakes
  • 10g dried mango
  • 10g dried pineapple chunks
  • 10g dried papaya chunks
  • generous pinch of cinnamon (approx 1/8 tsp)

Directions

  1. Add the rolled oats, dried fruit and cinnamon to a large, lidded jar.
  2. Pour in the coconut milk and yogurt.
  3. Using a fork, give all the ingredients a really good mix together.
  4. Secure the lid onto the jar, then place in the fridge overnight.
  5. Sprinkle with a little more fruit (optional) before eating straight from the jar.

Notes:

This overnight oats recipe works well with vanilla yogurt, or one with tropical flavours such as mango & passion fruit.

Although I feel the dried mango really makes a difference to the flavours of this recipe, you can adapt the dried fruit combinations according to personal tastes and available ingredients. Just ensure you use 30g of whichever selection of fruits you choose.
