Creme Egg Flapjack Cups

These Creme Egg Flapjack Cups are the ultimate Easter treat. Bake a simple flapjack recipe with hidden mini Cadbury's Creme Eggs, then top with extra chocolate and Creme Egg pieces.

Ingredients

(Makes 12)

  • 55g unsalted butter
  • 55g soft brown sugar
  • 2 generous tbsp golden syrup
  • 120g rolled oats
  • 9 mini Cadbury's Creme Eggs (chilled)
  • 50g milk chocolate

Directions

  1. Heat the oven to 150C/130Fan/Gas 2.
  2. Place the butter, sugar and golden syrup into a pan.
  3. Stirring continuously, melt the ingredients over a low heat until the sugar is dissolved. Remove from the heat.
  4. Tip in the oats. Stir to fully incorporate.
  5. Add 1 measured tablespoon of flapjack mixture to each hole of a 12 hole mini patty tin.
  6. Using the back of a small teaspoon, create a crater in the middle of the mixture, packing the excess up around the sides to form cup shapes.
  7. Using a sharp knife, cut 6 of the mini Cadbury's Creme Eggs in half along the seam.
  8. Push 1 half of the Creme Egg (open side up) into each flapjack cup until it's level with the rim.
  9. Spoon a heaped 1/2 teaspoon of flapjack mixture over the top of all 12 eggs. Gently spread this out and push down to form lids.
  10. Bake for 15 minutes.
  11. Remove from the oven and leave to cool in the tin. This will help the flapjack harden and make the cups easier to remove from the tin.
  12. Once cooled, carefully remove the flapjack cups and transfer to a wire rack.
  13. Chop the remaining 3 Creme Eggs into small chunks.
  14. Break the milk chocolate into equal sized pieces. Place in a microwavable bowl and microwave for 1 minute to fully melt the chocolate.
  15. Spoon the melted chocolate evenly over the top of the flapjack cups.
  16. Top with pieces of chopped Creme Eggs to finish.

Creme Egg Flapjack Cups Recipe Notes:

  1. Chilling the Creme Eggs first makes them easier to work with. I pop mine in the freezer to make sure the centres are completely hard and less likely to ooze out when chopping them in half.
  2. As you make the flapjack cups, you'll need to keep washing your teaspoon when it becomes sticky to prevent the mixture sticking to the spoon. Alternatively, use clean hands to push the flapjack mixture into place.
