Blueberry & Banana Bread

A deliciously moist Blueberry & Banana Bread made with healthy wholemeal flour, oats, honey, and fresh fruit. This easy, no-mixer required loaf cake makes an ideal breakfast or tasty snack for when you're on the go. It's also perfect for teatime.

Ingredients

  • 125g self-raising wholemeal flour
  • 100g rolled oats
  • 2 tbsp light soft brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 100ml melted coconut oil
  • 2 large eggs
  • 2 tbsp milk
  • 2 tbsp runny honey
  • 3 medium sized ripe bananas - mashed
  • 75g blueberries
  • 30g walnut halves - roughly chopped (optional)

Directions

  1. Heat the oven to 180C/160Fan/Gas 4.
  2. Line a 1.5 litre loaf tin with baking paper.
  3. Add the flour, oats, sugar, cinnamon and baking powder to a large bowl.
  4. Gently whisk together the oil, milk and eggs in a measuring jug.
  5. Pour the contents of the jug into the bowl, mixing as you go until all the ingredients are completely combined.
  6. Add the mashed bananas and honey. Mix to fully incorporate until a gooey consistency is reached.
  7. Fold in approximately a third of the blueberries, plus the walnut pieces (if using).
  8. Pour the mixture into the tin, using a spatula to spread it out evenly.
  9. Scatter the remaining blueberries over the top of the batter. Push them gently in to the mixture, leaving the tops showing.
  10. Bake in the oven for 1 hour, until the loaf is well risen and a skewer inserted in to the middle comes out clean. Hint: Check the colour of the cake after about 40 minutes. If it's looking too brown, cover the top with a double layer of baking paper to prevent it burning.
  11. Remove from the oven, leave the Blueberry & Banana Bread to cool slightly in the tin, then transfer to a wire rack to cool completely.
