Ingredients
- 150g plain flour
- 1 tsp baking powder
- 1 tbsp golden caster sugar
- 150ml milk
- 1 large egg - lightly whisked
- 25g butter - melted
- 1/2 tsp vanilla extract
- 1 medium ripe banana
- 50g dark chocolate chips
Directions
- Heat oven to 180C/160Fan/Gas 6.
- Lightly grease a 24 hole mini muffin tin with oil. Make sure you grease all the way up the sides.
- Sift the flour and baking powder together into a large bowl. Mix in the sugar.
- Lightly whisk together the egg, milk and vanilla extract. Pour this into the bowl, whisking as you go.
- Pour in the melted butter. Whisk again to create a smooth batter.
- Mash the banana with a fork. Mix this into the batter, along with approximately half of the chocolate chips.
- Spoon 1 tbsp of batter into each hole of the muffin tin.
- Drop 2 or 3 of the remaining chocolate chips on top of each batter serving.
- Bake in the oven for 10-12 minutes, until the muffin is risen and lightly golden.
- Leave to cool slightly, then remove from the muffin tin. You may need to very gently run a sharp knife around the edge to loosen the muffins.
- To enjoy them at their best, eat the Banana & Chocolate Chip Pancake Muffins whilst they are still warm.
