Banana & Chocolate Chip Pancake Muffins

Fans of banana bakes with love these easy to create Banana & Chocolate Chip Pancake Muffins. Made with an American Style pancake batter and packed full of dark chocolate chips, they're a mouthful of deliciousness.

Ingredients

  • 150g plain flour
  • 1 tsp baking powder
  • 1 tbsp golden caster sugar
  • 150ml milk
  • 1 large egg - lightly whisked
  • 25g butter - melted
  • 1/2 tsp vanilla extract
  • 1 medium ripe banana
  • 50g dark chocolate chips

Directions

  1. Heat oven to 180C/160Fan/Gas 6.
  2. Lightly grease a 24 hole mini muffin tin with oil. Make sure you grease all the way up the sides.
  3. Sift the flour and baking powder together into a large bowl. Mix in the sugar.
  4. Lightly whisk together the egg, milk and vanilla extract. Pour this into the bowl, whisking as you go.
  5. Pour in the melted butter. Whisk again to create a smooth batter.
  6. Mash the banana with a fork. Mix this into the batter, along with approximately half of the chocolate chips.
  7. Spoon 1 tbsp of batter into each hole of the muffin tin.
  8. Drop 2 or 3 of the remaining chocolate chips on top of each batter serving.
  9. Bake in the oven for 10-12 minutes, until the muffin is risen and lightly golden.
  10. Leave to cool slightly, then remove from the muffin tin. You may need to very gently run a sharp knife around the edge to loosen the muffins.
  11. To enjoy them at their best, eat the Banana & Chocolate Chip Pancake Muffins whilst they are still warm.
