Christmas Pulled Pork

This Christmas Pulled Pork is flavoured with festive spices then slow cooked in mulled wine.

It's an ideal recipe for seasonal Pulled Pork Burgers, and is perfect when catering for large groups. Simply serve it with sides of stuffing, apple sauce and brioche buns, then let everyone create their own burgers.

Ingredients

  • 1.5 - 2kg piece of pork shoulder
  • 1-2 red onions - thickly sliced (enough to cover to bottom of your cooking pot)
  • 200ml mulled wine

For the Christmas Pulled Pork rub:

  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp mixed all spice
  • 1/4 tsp grated nutmeg
  • 1/4 tsp salt
  • 1/4 tsp pepper

Directions

  1. Preheat the oven to 160C/140Fan/Gas 3
  2. Measure all the spices into a small bowl. Mix together, then rub all over the pork shoulder. This is easiest done with your fingers to ensure the meat is thoroughly covered and some of the mixture goes between the grooves of the pork rind.
  3. Arrange the onion slices on the bottom of your cooking pot, (an oven-proof pot with a lid is ideal). Pour the mulled wine over the onions.
  4. Place the pork shoulder on top of the onions. Cover tightly and put in the oven for 4 hours.
  5. After 4 hours, transfer the meat to a plate then remove the string and rind. Using your fingers, or 2 forks, gently pull the pork meat into large shredded pieces.
  6. Serve the Christmas Pulled Pork with brioche buns, apple sauce, and stuffing.

Christmas Pulled Pork Recipe Notes:

This Christmas Pulled Pork also works well as a Slow Cooker recipe. Simply follow steps 2 & 3 above, place the meat on top of the onions, then cook on low for 8 hours.
