Christmas Overnight Oats

Create a tasty, healthy breakfast, full of festive flavours, with this easy Christmas Overnight Oats recipe. Made with oats, traditional Christmas dried fruits, and a hint of seasonal spices. It's a wonderful additional to any festive breakfast table.

Ingredients

  • 50g rolled porridge oats
  • 10g mixed peel
  • 10g dried cranberries
  • 10g sultanas
  • 10g raisins
  • 1/4 tsp ground mixed spice
  • 100ml almond milk
  • 2 tbsp vanilla yogurt
  • Extra dried fruit to decorate (optional)

Directions

  1. Tip the rolled oats, mixed peel, dried cranberries, sultanas and raisins into a large, lidded jar.
  2. Add the ground mixed spice.
  3. Pour in the almond milk.
  4. Spoon in the vanilla yogurt
  5. Using a fork, give all the ingredients a really good mix together.
  6. Secure the lid onto the jar, then place in the fridge overnight (or for at least 2 hours).
  7. Top with extra dried fruit (if using). Enjoy straight from the jar.

Notes:

I feel the citrus flavours of the mixed peel really adds to this Christmas Overnight Oats recipe. However, if you don't like mixed peel, try using a 1/2 tsp of fresh orange rind, or a mixture of orange and lemon rind as a substitute.

You can also adapt the dried fruits used depending on personal tastes and what you have in the cupboard. Whichever dried fruits you choose, make sure it equates to 30g in total.
